Polenta circles with basil pesto

For this recipe you will need:
1 cup cornmeal
1 ½ ounces butter
4 cups water

Preparation:


1. Bring the water to a boil, add the butter. While stirring, gradually pour in the cornmeal.

2. Reduce the heat and simmer for 40 minutes, stirring constantly with a large wooden spoon.

3. Spread ¼ inch layer of hot polenta onto the baking sheet and cool until firm.

4. Cut polenta circles with round biscuit cutter and put them onto the paper molds.

5. Put a teaspoon of basil pesto on each polenta circle and serve as appetizer.
