Greek Salad Recipes

For this recipe you will need:
feta
tomatoes
cucumbers
shallots
olives
olive oil
oregano
salt
ground black pepper

Greek salad, as an element of Greek cuisine, is called in Greece «horiatiki», or "peasant salad".

Prerequisites in Greek salad are feta, tomatoes, cucumbers, shallots and olives dressed with olive oil, oregano, salt and ground black pepper. Along with this, the vegetables are cut coarsely instead of finely chopped. In Greece, feta is not usually mixed with vegetables; instead, thick slices of feta are put over the vegetables.

Our authors offer their own versions of a Greek salad, slightly changing the composition of ingredients and dressing.


Greek Salad with Lettuce, Onion and Dill

Ingredients for 3 salad bowls:
2 tomatoes
1 onion
1 bunch lettuce
2 cucumbers
200 g feta
1 cup black pitted olives
sprig of dill, chop
3 tsp olive oil
½ lemon
⅓ tsp salt
⅓ tsp ground black pepper


Preparation:

1. Cut tomatoes into chunks.

2. Cut cucumbers into cubes.

3. Leave 7-10 olives for topping, and cut others into slices.

4. Cut the onion into half-rings.

5. Cut feta into cubes.

6. Prepare the dressing by mixing olive oil with salt, pepper and a squeeze of lemon juice.

7. Line salad bowl with lettuce.

8. In separate bowl, put tomatoes, cucumbers, onion, feta, sliced olives, dill; then mix with dressing.

9. Put mixed ingredients in a salad bowl on top of the lettuce; then add whole olives at the end.

Ingredients:
3 heads romaine lettuce
500g tomatoes, cubed
300g cucumbers, cubed
300g bell pepper, cubed
200g canned black olives, pitted
100g feta cheese, sliced
1 cup shelled walnuts
5 tbs. olive oil
2 tbs. lemon juice
salt to taste
bunch of dill, chopped


Preparation:

1. Mix the tomatoes, cucumbers, bell pepper, olives, and walnuts in a deep bowl.

2. Dress the salad with a mixture of olive oil and lemon juice.

Add salt to taste.

3. Tear the lettuce leaves and lay them on serving plates.

4. Put the chopped vegetables atop the lettuce leaves; add the feta cheese and chopped greens.

Ingredients:

2 heads of romaine lettuce
15 cherry tomatoes
3 cucumbers
200 g pickled black olives
1 mild red onion
200g firm feta cheese
8 tablespoons extra virgin olive oil
4 tablespoons wine vinegar
oregano, parsley, salt to your taste.


Preparation:

  1. Cut the cucumbers and onion into thin slices.
  2. Dice the feta and cut the cherry tomatoes into halves.
  3. Chop oregano and parsley.
  4. Tear the lettuce into pieces and arrange them on plates in equal portions.
  5. Put the some cherry tomatoes, cucumbers, onions, feta and black olives onto the lettuce.
  6. Whisk the olive oil, vinegar, herbs and salt to your taste in a separate bowl to make the dressing.
  7. Drizzle the dressing over the salad on plates.

Notes:

The vinegar can be replaced by juice of 1 or 2 lemons.

You can also add 1 or 2 sliced bell peppers to the salad.
