Cut the fresh low-meat high-fat bacon into large slabs (6” x 6” or 15 x 15 cm)
Roll each piece in coarse salt to coat completely.
Put the salted bacon slabs in a pan and refrigerate for 3 - 4 days.
Completely wash all the salt off the bacon slabs.
Prepare a mix of finely chopped parsley and crushed garlic.
Thoroughly mix the garlic mix with the bacon slabs.
Store the prepared bacon slabs in a freezer.

Prepare the marinade by dissolving 3 heaping tablespoons of salt in 1 liter of water; add one teaspoon of   medium hot paprika and one tablespoon of ground black pepper.
Cut fresh side pork into pieces 15 cm long x 2 cm thick.  
Peel onions and reserve the peels. Quarter the peeled onions.
Lay the side pork pieces in a pan. Cover each layer with onion quarters and onion peel.
Cover the pan contents with the marinade; bring to a boil and cook for 1 hour.
After boiling, leave the side pork in the marinade for 12 hours.
Peel and crush garlic.
Remove side pork from the marinade, and rub each piece with the crushed garlic.

1.    Slice green onion, 40 g of olives and half of the herbs; grate cream cheese, combine and stir the mixture.
2.    Lay a ham slice on a level surface; put some cream stuffing into it and roll it tightly; repeat the procedure with the remaining ham slices.
3.    Cut the rolls into bite size pieces.
4.    Serve accompanied with herbs to your taste on a dish decorated with shredded carrot, lettuce and remaining olives.
