Side Pork Cooked in Onion Peel Recipe

For this recipe you will need:
2 ¼ lbs (1 kg) fresh side pork
1lb (500 g) onions
Medium hot paprika
Ground black pepper
1 garlic bulb

Prepare the marinade by dissolving 3 heaping tablespoons of salt in 1 liter of water; add one teaspoon of medium hot paprika and one tablespoon of ground black pepper.

Cut fresh side pork into pieces 15 cm long x 2 cm thick.

Peel onions and reserve the peels. Quarter the peeled onions.

Lay the side pork pieces in a pan. Cover each layer with onion quarters and onion peel.

Cover the pan contents with the marinade; bring to a boil and cook for 1 hour.

After boiling, leave the side pork in the marinade for 12 hours.

Peel and crush garlic.

Remove side pork from the marinade, and rub each piece with the crushed garlic.

Store the cooked side pork in a freezer before serving.
