Spiced pork fatback

For this recipe you will need:
1 kg pork fatback on the skin
⅔ cup kosher salt
1 bulb garlic, peeled and finely sliced
1 tsp freshly ground black pepper
3 bay leaves, crushed
2 tsp hot paprika
1 tsp dried basil
1 tsp cumin seeds


1. Rinse slabs of fatback in cold water, and then dry with a paper towel.

2. Place slab of fatback on the cutting board skin side down, and make incisions on fat 1 cm deep.

3. Stuff incisions with garlic and bay leaves.

4. Mix the seasonings with salt and roll fatback slabs in mixture thoroughly.

5. Wrap the slabs of fatback in plastic wrap and leave in the refrigerator for 2 weeks.

6. Before serving, scrape off the salt and cut Spiced Fatback into thin slices.
