Home-style Ragout Recipe

For this recipe you will need:
10 oz (300 g) any boneless flesh of pork (leg, collar, shoulder)
2 lb (800 g) eggplants
1 large carrot
Refined vegetable oil
Various greens

Prepare the vegetables in advance:

Pare and cut the carrot into strips;

Pare and cut the eggplants into strips, salt 10 minutes and set aside to remove bitterness.

Finely dice the meat and stew it in a frying pan for 15 minutes.

After the liquid has evaporated, lightly fry the meat in vegetable oil.

Add the carrot to the fried meat and fry until the carrot is cooked.

Add the eggplant to the ragout and fry covered over a low flame for 10 - 15 minutes.

Remove the lid and continue frying the ragout over a low flame until the eggplant is cooked.

Decorate the cooked ragout with greens.
