Spaghetti & duck breast with pesto sauce

For this recipe you will need:
2 duck breasts
10 oz (300 g) spaghetti
3 L water
1 tbsp olive oil for spaghetti
olive oil for frying
2 tsp salt
2 medium tomatoes, sliced
¾ cup pesto sauce
2 oz (60 g) Parmesan, grated
bunch of fresh rosemary
**** FOR MARINADE:
1 tbsp balsamic vinegar
1 tbsp honey
4 tbsp soy sauce
a pinch of grated ginger
a pinch of crushed coriander seeds
a pinch of crushed black pepper

Preparation:

Prepare the marinade by mixing balsamic vinegar, honey, soy sauce, grated ginger, crushed coriander seeds and crushed black pepper.

Prepare the duck breast:

1. Slice the duck breasts and soak in the marinade for 1 hour.

2. Fry the duck slices with vegetable oil and fresh rosemary sprigs on both sides until browned.

3. Add remains of the marinade and tomato slices to the duck and stew for another 15 minutes.

4. Keep warm until spaghetti is ready.


Cook the spaghetti while duck breast is stewing:

1. Bring the water to the boil, add salt and olive oil.

2. Dip the spaghetti into the boiling water and stir until the water begins to boil again.

3. Reduce heat and boil until spaghetti is al dente.

4. Turn off the heat and drain the spaghetti using a preheated colander.

5. Mix thick pesto sauce with the spaghetti broth to a liquid state.

6. Return the spaghetti to the same saucepan, add grated Parmesan and mix with diluted pesto sauce.


Serve the pesto spaghetti in warm bowls with stewed tomato slices, marinade and duck breast.
