Pistachio Pesto

For this recipe you will need:
2 cups fresh sweet basil leaves
|
1 cup fresh parsley
|
¼ cup shelled toasted pistachios
|
2 garlic cloves
|
½ teaspoon kosher salt
|
¼ cup grated Parmesan
|
¼ cup grated Pecorino Sardo
|
1 tbsp fresh lemon thyme leaves
|
1 tbsp fresh oregano leaves
|
½ cup EVOO
|
Pistachio Pesto is a pesto sauce in which classic pine nuts are replaced by pistachios.
As for the other ingredients, you can stick with the classic version of a pesto sauce recipe, or express your imagination by adding and removing ingredients.
Preparation:
1. Grind the pistachios and greens in a food processor, then add garlic, kosher salt, olive oil and pulse again to combine.
2. In a large bowl, mix the paste with grated cheeses.
The Pistachio Pesto is ready!
Serve it with hot pasta dishes, sandwiches, etc.
