Tomato Pesto Sauce

For this recipe you will need:
a dozen medium-sized fresh ripe tomatoes
5 cloves garlic
¾ cup extra-virgin olive oil
½ tsp coarse salt
1 cup grated Parmesan
½ cup freshly toasted pine nuts
¼ cup chopped cilantro

To prepare the tomato pesto, tomatoes are used in any form.

Of course, the most fragrant product is obtained if you use fresh, ripe tomatoes.

If tomatoes are unripe, it’s better to peel them or roast in the oven before chopping.

You can also use sun-dried or tinned, blanched tomatoes for your Tomato Pesto Sauce.

There are Tomato Pesto recipes without any greens; however, you can add to the sauce any greens to your taste, such as basil leaves, parsley, etc.

This is the recipe for Tomato Pesto with fresh ripe tomatoes:

Preparation:

1. Cut the tomatoes into quarters and remove the stems.

2. Combine the tomatoes, toasted pine nuts, cilantro, garlic, salt and olive oil in a food processor and pulse until smooth.

3. Add grated Parmesan, blend, and then pour into a bowl.

4. Serve Tomato Pesto Sauce in the same way as any pesto sauce: with pasta, sandwiches, bruschetta, meat and fish.
