Chicken baked on salt pillow

For this recipe you will need:
1 chicken
2 tbsp mayonnaise
1 tbsp mustard
⅓ tsp ground black pepper
7 allspice berries
2 kg coarse salt for a pillow

Coarse salt pillow promotes even roasting of the chicken, and also avoids the operation of rubbing with salt.

Preparation:

1. Gut and wash the chicken.

2. Slit the chicken breastbone, and then expand the carcass to facilitate further processing.

3. Mix the mayonnaise with mustard and rub the chicken inside and out with this mixture.

4. Return the carcass into a natural form, sprinkle with ground black pepper, and then stuff allspice berries under the chicken skin.

5. Sprinkle coarse salt on a baking sheet evenly and place the chicken back facing upwards.

6. Bake the chicken on salt pillow in the oven for 1 hour at 170 °C (340 °F), then turn it back down and bake for another 30 minutes.
