Chicken breast with pistachio pesto sauce

For this recipe you will need:
1 chicken breast fillet for one portion
1 tbsp olive oil
cooked carrot, julienned
mashed potatoes
fresh spinach leaves
pistachio pesto sauce
salt and freshly ground black pepper to taste


1. Half the chicken breast fillet, rinse and pat dry.

2. Heat a heavy sauté pan with olive oil over medium-high.

3. Sprinkle chicken breast with salt and pepper and fry briefly on both sides.

4. Reduce heat to low and continue to fry chicken breast for 8-9 minutes on each side.

5. Serve hot with mashed potatoes, julienned cooked carrot, fresh spinach leaves and pistachio pesto sauce.
