Chicken Fillet Stewed with Pineapple Juice, Wine and Cheese

For this recipe you will need:
2 chicken breasts
|
2 cloves of garlic, cut in halves
|
1 cup dry white wine
|
½ cup pineapple juice
|
Salt and freshly ground black pepper to taste
|
1 bunch of greens, chopped
|
150 g cheese, grated
|
Vegetable oil for frying
|

Preparation:
1. Fillet the chicken breasts.
2. Rub the chicken fillets with garlic halves; then discard the garlic.
3. Mix pineapple juice, wine, salt, and pepper in a bowl.
4. Soak the chicken fillet in the marinade and refrigerate for 4 hours.
5. Fry the chicken fillets briefly in vegetable oil on both sides.
6. Sprinkle the chicken fillet with chopped greens, add some marinade to the frying pan and stew covered over medium heat for 20 minutes.
7. Sprinkle the chicken fillet with grated cheese and continue stewing covered for 10 more minutes.
8. Serve garnished with spaghetti and fresh vegetables.
