Roast duck with prunes and apples

For this recipe you will need:
1 duck
|
sour apples, cut into cubes
|
prunes
|
salt
|
ground black pepper
|
dry poultry seasonings
|
Preparation:
1. Rinse the duck inside and out, and pat dry with paper napkins.
2. Stuff tightly the duck with prunes and cubed apples.
3. Sew stuffed duck or secure with toothpicks.
4. Rub the duck with salt, seasonings and pepper.

5. Pierce the duck skin with a knife in the fatty areas.
6. Put the stuffed duck in the oven for 30 minutes at a temperature of 220-230 °C (430-450 °F), until the fat is in the pan. While roasting, drizzle duck with its own juices a few times.

7. Reduce the oven heat to 190-200 °C (370-390 °F) and roast for another 1.5 hours.
Irrigate the duck with melted fat every half an hour, rotating the pan every time.
