Fried Khachapuri recipe

For this recipe you will need:
100 g of butter for brushing
*** DOUGH:
5 cups flour
2 cups clabber
2 tbsp vegetable oil
1 egg
1 tsp salt
1 tsp sugar
1 tsp baking powder
*** FILLING:
1 egg
5 tbsp butter, melted
800 g brined sheep cheese

Preparation:

1. Mix the flour with the baking powder and sift.

2. Hollow the middle of the flour mound, add the egg, salt, sugar, vegetable oil, and pour the clabber slowly.

3. Knead the soft, non-sticky dough.

4. Divide the dough into 10 equal parts and roll out into thin, flat cakes.

5. Mash the brined sheep cheese, add the egg and melted butter. Mix well.

6. Put 2-3 tbsp of the filling onto each flat cake.

7. Connect the edges of the flat cake to the center and twist edges to leave no air inside.

8. Press lightly the raw khachapuri, turn seam side down, and gently stretch it with hands.

9. Heat up the frying pan and grease with a little butter (for the first khachapuri only).

10. Put the khachapuri in the pan, poke with a fork repeatedly.

11. Fry over medium heat on both sides until browning.

12. Brush finished khachapuri abundantly with butter. Stack on a plate. Serve hot.
