Achma pie (Caucasian cheese pie) recipe

For this recipe you will need:
1 kg (2lbs) flour
600 g (1 ½ lbs) of hard or brine cheese, or a mixture of different cheeses
3 eggs
2/3 cup water
300 g (½ lb) butter
Salt to taste

Preparation
1. Add the water, salt, and flour to the eggs, then whip.

Add the flour gradually until the dough is smooth and pliable


2. Divide the dough into 8 parts, one of which should be bigger than the others.


3. Make 8 balls of dough and leave them for 10 minutes.


4. Roll out the biggest ball into a disk to fit the frying pan you are using.

Put the disk into the greased frying pan and spread the melted butter over the surface.


5. Roll out the other balls into thin disks.

Put the dough disks into boiling water for 1 - 2 minutes.

Take the disks out of the boiling water, cover them with cold water, then drain the water through a colander.


6. Grate cheese on grater.


7. Put three boiled dough disks onto the big uncooked disk, spreading the butter liberally over each disk.

Sprinkle with half the grated cheese.


8. Put three more boiled disks atop of the cheese, spreading butter over each disk.

Sprinkle with the rest of the grated cheese on top.


9. Fold the outer edges of the uncooked disk and put the last boiled disk atop.

10. Cut the pie into 8 parts and bake at 200 °C (400°F) until a golden crust forms. 


 In the following Achma Pie Recipe the traditional dough cakes are replaced by sagg pita.

Ingredients:

3 pieces – Sagg Pita

1 C – Kefir

3 eggs

100g of butter

400g of grated hard cheese


Preparation:

1. Preheat oven to 180°C or 360°F.

2. Mix together eggs and Kefir in a small bowl – set aside.

3. Grease your pan with the butter.

4. Place 1 piece of sagg pita in the pan so that the edges of the pita hang over the sides of your pan.

5. Tear the other two sagg pitas into pieces.
     Drench pieces into the kefir mix; layer into the pan and cover with a layer of grated cheese.

6. Repeat alternating layers of torn sagg pita and grated cheese until you have used all the pita pieces.

7. Take the edges of the sagg pita overlapping the edge of the pan and fold over the top.

8. Pour the rest of kefir mixture on top. Cover with a final layer of grated cheese and add pieces of butter on top of the cheese.

9. Place pan in preheated oven and bake for 20-25 minutes until golden brown.

10. Remove Achma Pie from oven, cut into portions and serve hot.
