Sea Scallops with Herb Butter in Shell Recipe

For this recipe you will need:
Unsalted softened butter
any greens to your taste
sea salt
sea scallops
You can use any greens to your taste; for example, chives, basil, thyme, parsley, dill, sage, tarragon, rosemary etc. Use a single herb or any mix if desired.

1. Make herb butter.
- Finely chop herbs that you have chosen.
- Finely chop 2 – 3 garlic cloves.
- Take at one volumetric part of finely chopped herbs and two volumetric parts of softened unsalted butter.
- Place the butter in a bowl. Add chopped herbs, garlic and pinch of sea salt. Blend all contents thoroughly with fork or a food processor.

2. Fry sea scallops.
- Thaw sea scallops, as described here.
- Fry the scallops in a pan with olive oil about 1 to 2 minutes per side.

3. Warm the herb butter at low heat until it turns to liquid.

4. Transfer each scallop to the shell, pour warm herb butter on top, and sprinkle with juice from half a lemon.

5. Serve with lemon slices and dill.
