For this recipe you will need:
frozen halibut
|
1 cup wheat flour for breading
|
vegetable oil for frying
|
3 pinches of salt
|
potato fries
|
pickled beets cut into thin strips

fresh carrots cut into thin strips

sprig of parsley

Preparation:
1. Gut the halibut, cut off the head, and wash under running water.
2. Cut the halibut into thick steaks.
3. Divide each steak into two parts by making two lengthwise cuts along the spine and removing the spinal bones.
4. Mix the flour and salt, and pour onto a flat surface. Roll the fish in the flour.
5. Preheat a frying pan with vegetable oil and fry the halibut parts over high heat for 1 minute on each side.
6. Reduce the heat to low and continue frying the halibut until cooked (about 10 minutes on each side).
7. Serve with a complex garnish of potato fries, green onion, parsley, pickled beets, shredded fresh carrot, and garlic butter.
