Fried Zander Recipe

For this recipe you will need:
Fresh zander
1 cup breadcrumbs
Vegetable oil for frying
3 pinches of salt
Potato fries
Pickled beets cut into thin strips
Fresh carrots cut into thin strips
Cherry tomatoes
Bunch of parsley
Garlic butter

Preparation:

1. Scale and gut the zander, remove the gills, and wash under running water.

2. Cut the zander into thin steaks; halve each steak along the spine. Dry the steak halves with a napkin.

3. Mix the breadcrumbs with salt; pour onto a flat surface and roll the steak halves in them.

4. Preheat a frying pan with vegetable oil and fry the fish over high heat for 1 minute on each side.

5. Reduce the heat to low and continue frying the zander until cooked (about 12 minutes on each side).

6. Serve with a complex garnish of potato fries, cherry tomatoes, parsley, pickled beets, shredded fresh carrot, and garlic butter.
