Grilled Tuna Loin Skewers

For this recipe you will need:
1 kg tuna loin
|
8 bamboo skewers
|
* * * * * FOR MARINADE:
|
juice of 2 limes
|
¼ cup dry red wine
|
6 basil leaves
|
ground black pepper and salt to taste
|
* * * * * FOR GARNISH:
|
canned sweet corn
|
black olives
|
parsley
|
lemon, cut into slices
|
lettuce
|
tomatoes, cut into spiral strips
|
Preparation:
1. Cut the tuna loin into large cubes; cover with marinade and let soak for 30 minutes.
2. Put the tuna cubes on bamboo skewers and roast over embers on the rack, 2 minutes on each side.
3. Serve hot, garnished with greens and vegetables.
