Whole Baked Zander Recipe

1 zander

1 lemon

½ cup mayonnaise

1 tsp. salt

1 tsp. freshly ground black pepper

1 bulb onion, peeled and cut into rings

2 potatoes, peeled and cut into thick circles
|
Vegetable oil for frying
|
1 tomato, cut into segments

Greens, chopped

Preparation:
1. Scale and gut the zander, and remove the gills.
Wash the fish thoroughly under running water, then dry with a napkin.
2. In a separate bowl, mix the mayonnaise, juice of half a lemon, freshly ground black pepper, and salt.
Spread the mayonnaise mix graciously over the zander (inside and out); place the fish on a baking tray and leave for 30-40 minutes.
3. Fry the potatoes with the onion in hot vegetable oil until a light brown crust forms.
4. Put the fried potato and onion on the baking tray with the zander and add a little water.
5. Bake zander at 150°C for 30-45 minutes, basting the fish regularly with its own juices.
6. Decorate the zander with a criss-cross pattern of mayonnaise, as well as greens and tomato segments.
