For this recipe you will need:
*** for 6 portions:
3 tomatoes
3 celery stalks
1 leek stalk
3 cloves garlic
2 potatoes
1 zucchini
1 carrot
½ cup fresh green peas
1 bell pepper
small bunch of fresh basil
a few young blackcurrant leaves
1 tsp dried thyme
1 tsp dried oregano
pinch of ground black pepper
salt to taste
4 tbsp olive oil for frying

Preparation:

1. Peel the tomatoes and then chop.

2. Chop the celery, leek and garlic.

3. Preheat a saucepan with olive oil, pour in the chopped vegetables and sauté over low heat, stirring constantly for 10 minutes. Turn off the heat and set aside the saucepan.

4. Peel the potatoes and carrots, and then dice.

5. Cut the bell pepper, remove the insides, and then dice.

6. Dice the zucchini.

7. Put the diced vegetables into a separate pan, pour in the water, bring to a boil, and simmer for 20 minutes. The amount of water depends on how thick you wish your Minestrone soup to be.

8. Remove the pan from the heat; remove half of the vegetables using a skimmer and grind in a blender.

9. Return the chopped vegetables in a pan, bring to a boil over medium heat, and then reduce the heat to a simmer.

10. Add the peas, simmer for 5 minutes, and then add the chopped basil, chopped currant leaves, salt and spices.

11. Simmer for another 10 minutes, and then remove from the heat.


The Minestrone is ready!

Divide the Minestrone soup into portion bowls and serve with toasts and pesto sauce.
