Smoked Ribs Solyanka

For this recipe you will need:
500 g smoked ribs (pork or beef)
1 carrot, peeled and grated
half a lemon, cut into slices
2 onions, peeled and finely chopped
2 tomatoes, cut into half slices
10 black olives
3 pickles, finely diced
smoked sausage, diced
⅓ cup rice
vegetable oil for frying

Preparation:

1. Pour water over the ribs; bring to the boil and cook for an hour over medium heat, removing scum.

2. Remove the ribs from the broth, cut the meat off the bones and chop.

3. Fry briefly onions and carrot in vegetable oil.

4. Add pickles in frying pan; continue to fry for 2-3 minutes.

5. Add tomatoes in frying pan, cover and stew for 5-7 minutes.

6. Add rice in frying pan and stew for another 10 minutes.

7. In a separate pan, fry briefly the smoked sausage, and then add to the boiling broth.

8. Add ribs meat to the broth and cook for 5-7 minutes.

9. Add vegetables stewed with rice, lemon slices, olives and ½ cup pickle brine to the broth.

10. Cook for 10 minutes. Serve hot solyanka after 15-20 minutes.
