Unsophisticated beef soup

For this recipe you will need:
800 g beef ribs
2 L water
3 potatoes, peeled and coarsely cut
2 onions
black ground pepper
6 peppercorns
3 bay leaves
1 carrot, peeled and grated
4 cloves of garlic, crushed
bunch of parsley, chopped
salt to taste

Preparation:

1. Wash the beef, cut into large chunks, cover with water; bring to the boil and cook, removing the scum.

2. Add to the broth bay leaves and peppercorns.

3. Wash one onion, trim off the root end, add to the broth and cook until meat is tender.

4. Remove boiled onion from the broth.

5. Peel and chop second onion and then add to the broth, along with potatoes and carrots.

6. Add salt and pepper and cook until potatoes are tender.

7. When serving, add crushed garlic and parsley to each portion.
