For this recipe you will need:
SPONGE
CREAM
ICING
STUFFING
TOPPING

Chocolate Sponge with Dried Fruit

Ingredients:

* * * * * FOR SPONGE:

1 cup sour cream

2 eggs

1 tsp soda, soaked in vinegar

3 tsp cocoa powder

1.5 cups flour

200 g sweetened condensed milk

200 g boiled sweetened condensed milk

1 cup sugar

* * * * * FOR CREAM:

1/2 cup sugar

1/2 liter sour cream

* * * * * FOR ICING:

200 g boiled sweetened condensed milk

2 tbsp sugar

2 tsp cocoa - powder

200 g butter

1 chocolate bar (100 g)

* * * * * FOR STUFFING:

Dried apricots

Prunes

Raisins

* * * * * FOR TOPPING:

Walnuts

Desiccated coconut


Preparation:

1. Boil one unopened can (400 g) of condensed milk for 2 1/2 - 3 hours.


2. Prepare the sponges:

2.1. Mix the eggs, sour cream, baking soda, and cocoa.

2.2. Add the flour, condensed milk, and sugar.

2.3. Knead the dough, divide it into 3 parts and roll each part out into a round cake.

2.4. Bake the sponges in a 200 0C (390 0F) preheated oven until cooked (about 45 minutes).


3. Prepare the cream by mixing the sugar and sour cream.

4. Poke several holes in 2 of the  sponges with a teaspoon handle, then coat graciously with the cream.

5. Cover one sponge with 1/3 of the dried fruit stuffing, then place the other sponge over it.

6. Tear the third sponge  into pieces; put the pieces atop the two first sponges .

7. Pour the remaining cream over the sponge  pieces, and add the remaining dried fruit stuffing.


8. Prepare the icing:

8.1. Melt the butter.

8.2. Mix all icing ingredients EXCEPT the chocolate, and bring to a boil.

8.3. Add the melted chocolate and stir until soft.


9. Cover the sponge cake with the hot icing; arrange the walnuts atop and sprinkle with desiccated coconut.

Uncomplicated Chocolate Sponge recipe

This is a simple recipe of Chocolate Sponge, without condensed milk, dried fruits and chocolate bar.


Ingredients:

For Sponge:
1 C sugar
2 eggs
1 C room temperature sour cream
2 C flour
1 ½ tsp baking soda soaked in vinegar
2 tbsp cocoa powder

For Cream:
1 C sugar
3 C + 5 tbsp sour cream

For Glaze:
4 tbsp. sour cream
4 tbsp. cocoa
6 tbsp. sugar

Additional Ingredients:
3 C toasted halved walnuts


Preparation:

1. Prepare the dough.
  1.1. Combine dough ingredients and leave in a warm place for 20 minutes prior to baking.
  1.2. Preheat oven to 390°F or 200°C; line cake pans with parchment paper.
  1.3. Divide dough into two parts and roll into round cakes.
  1.4. Bake for 15-20 minutes and then set aside to cool.

Note: You can use your bread machine to mix the dough. If using your bread maker follow your model’s instructions for DOUGH.

2. Prepare the cream. Add sour cream and sugar to a mixing bowl. Mix until sugar dissolves and mixture is smooth.

3. Place one layer of the cut sponge on a cake plate, spread cream over layer, sprinkle with toasted walnuts and top with second layer.

4. Cover the second layer with cream and walnuts. The base of the cake is ready!

5. Take the second cake and tear it into small pieces.

6. Add the pieces of sponge cake and remaining cream and walnuts to a saucepan; mix gently until incorporated.

7. Place mixture in a heap at the base of the cake.

8. Prepare the glaze.
   8.1. Add sour cream, cocoa and sugar to a saucepan.

   8.2. Bring mixture to a boil, stirring continuously

   8.3. Remove from heat and allow to cool


9. Pour the glaze over cake and top with remaining walnuts.


The Chocolate Sponge is ready!
