Coconut Pie Recipe

For this recipe you will need:
Batter ingredients:
1 ½ cups wheat flour
2 teaspoons baking powder
¾ cup sugar
1 ½ cups sour cream (20% fat)
1 egg
Topping Ingredients:
1 ¼ cup desiccated coconut
¾ cup sugar
Cream (20% fat)

Prepare batter by whipping an egg with sugar and other ingredients.

Line pie pan with baking paper and pour the batter into the pie pan.

Mix the desiccated coconut and sugar, and sprinkle the mix over the batter.

Cover the batter with foil and bake in a 400 0F (200 0C) oven for 40 - 50 minutes. 
Check the doneness of the pie by piercing it with a toothpick. If the toothpick comes out dry, the pie is done.

Remove the pie from the oven, remove the foil and cover the hot pie with cream.

Cooking Tip: To ensure even baking, put a tray filled with sand at the bottom of the oven.
