Cut the boar carcass (skin removed) into quarter parts.

Cut the fat layers from the carcass quarters for salting.

Cut the quarters into chunks suitable for cooking soup, frying, or stewing, or barbeque.

Remove the skin from the boar’s head.

Cut the meat from the head to make aspic.

Cut the tongue out of the head and soak the tongue for boiling or stewing.

Separate the lower jaw.

Cut the top part of the skull lengthways, break into two parts and remove the brain.

Remove outer membrane from the brain; keep the brain for preparation.
