Boiled Wild Boar Tongue Recipe

Wild boar tongue
|
1/2 carrot; cut into large chunks
|
2 bay leaves
|
6 allspice berries
|
1 tsp. salt
|
1 sprig parsley
|
1 tbsp. horseradish sauce

Preparation:
1. Soak the boar's tongue in cold water for 24 hours, replacing the water periodically.
2. Place the tongue in a pan, cover with cold water, and bring to a boil over high heat.
3. Reduce the heat to medium and cook the tongue for 5 minutes.
4. Pour the water out; wash the tongue under running water.
5. Place the tongue back in the pan, cover with cold water, bring to a boil, and cook over low heat for 1 1/2 hours. Periodically skim the foam.
6. Add the carrot, salt, bay leaf, and allspice berries to the pan; continue cooking for 30 minutes.

7. Cool the cooked tongue in cold water, remove the skin, and cut off sublingual muscles.

8. The remaining broth may be saved for cooking soup or meat stew.
9. Cut the tongue into thin slices, lay on a plate and serve with parsley and horseradish sauce.
